How it is made

Harvest
Late summer. We pick chillies ripe and red, not green because we are in a hurry.

6 weeks in brine
The peppers ferment in salt brine. That is where the flavour comes from. We just wait, angrily.

Small batch
We blend, cook and bottle by hand, 400 bottles at a time. Every batch is numbered.
